Ingredients

  • Barbecue sauce
  • 1 medium onion (chopped)
  • 4 cloves of garlic (chopped)
  • 1 chilli (chopped)
  • 50g light brown sugar
  • 200ml white wine vinegar
  • 220ml tomato ketchup
  • 2 tbsp clear honey
  • 2 tsp smoked paprika
  • 2 tsp cayenne pepper (reduce/use hot chilli powder to make less hot)
  • Pinch of salt
  • Pinch of pepper
  • 2 x 400g tins of chopped tomatoes
  • Meat combination
  • 2 red onions (diced)
  • Mushrooms (sliced)
  • 1 clove of garlic (finely chopped/crushed)
  • Chorizo sausage
  • Chicken
  • Smoked bacon
  • Pepperoni
  • Pieces of cooked meatball
  • (Any other meats can be used)
  • Cheese sauce
  • Knob of butter
  • Plain flour
  • Milk
  • Cheese (grated)
  • Dried lasagne sheets

Instructions

  • Barbecue Sauce
  • 1. Heat a saucepan, add olive oil and saute onions garlic and chilli until tender
  • 2. Combine all other ingredients (apart from tinned tomatoes) in a jug and whisk
  • 3. Add mixed ingredients to the saucepan and also add the tinned tomatoes
  • 4. Bring to the boil then turn the heat right down and simmer for 1-1.5 hours stirring every so often
  • 5. Allow to cool a little and blend to a smooth sauce
  • Meat Combination
  • 1. Heat frying pan and add olive oil and fry off onions, mushrooms and garlic for 2-3 minutes
  • 2. Add chorizo to the pan and fry until all other ingredients are tender, then transfer ingredients to a casserole dish/large bowl
  • 3. Throw chicken and bacon into the hot frying pan together and cook off until chicken is slightly browned and bacon is opaque and put into the bowl with the other ingredients
  • 4. Add meatball pieces and pepperoni to the frying pan and cook for 2-3 minutes
  • 5. Add all ingredients from the bowl back to the pan and combine.
  • Cheese sauce
  • 1. Melt butter on a low heat in a saucepan
  • 2. Add flour and stir constantly to make a roux (if this becomes too paste-like add more butter)
  • 3. Pour in milk, increase heat and stir
  • 4. When smooth add as much cheese as you want and stir until melted
  • Lasagne
  • 1. Put a layer of lasagne sheets at the bottom of a large oven-proof dish
  • 2. Spread a layer of barbecue sauce over the sheets and put a layer of the meat combination on top of this, drizzle some more sauce over the meat and add another layer of pasta.
  • 3. Put another layer of meat on top of the pasta and drizzle more sauce over the top and add another layer of pasta.
  • 4. Add a final layer of meat on top of the pasta and pour over the remaining sauce and add a final layer of pasta.
  • 5. Pour over cheese sauce and put into a preheated oven on gas mark 6 (approximately 200 degrees) for around 25-30 minutes.
  • 6. Cut up into portions, serve, eat lots, then have seconds and thirds :)
