Basic Curry Recipe
This aromatic and flavorful recipe combines a blend of spices and tender meat to create a rich and satisfying dish. The onions and whole spices are gently fried to release their fragrance before being simmered with the meat and a medley of seasonings. Ingredients
- 500 - 750g meat (chicken, beef, lamb etc)
- 1 tbsp ground coriander
- 1 heaped tsp cumin
- ý tsp paprika
- ý tsp dried chili flakes or fresh if desired
- ý tsp salt (to taste)
- ý tsp sugar
- 1 tsp garam masala
- 2-3 cardamom pods
- 2-3 cloves
- 1 inch piece cinnamon stick
- 1 tbsp tomato paste
- 1 inch piece of ginger
- 2 garlic cloves (finely chopped)
- 1 large onion (diced)
- Sunflower oil
- ý pint /250 ml water or stock
- To garnish: (optional)
- Par boiled potatoes
- Green peppers
- Coriander
- Fresh tomato
- Yogurt
- Creamed coconut
Instructions
- Shallow fry onion, cardamom pods, cinnamon stick & cloves in sunflower oil until onion is translucent.
- Mix all dried ingredients except sugar, salt & garam masala with a small amount of water (this prevents spices from burning).
- Add spice mix to onions, reduce heat and cook of for approximately 5 minuets until oil separates from mixture, (add more water if required to prevent spices burning).
- Add tomato paste, garlic, ginger,sugar & salt.
- Add meat (browned off if preferred, but not necessary), add water/stock, cover and simmer for approximately 20 minuets.
