Banana Crumb Muffins

Ingredients
- For the Muffin
- 355 ml (1.5cups) plain flour
- 5 ml (1 tsp) baking soda
- 5 ml (1 tsp) baking powder
- 2 ml (1/2 tsp) salt
- 3 large ripe bananas (mashed)
- 177 ml (3/4 cup) sugar
- 1 whole egg lightly beaten
- 78 ml (1/3 cup) butter (melted)
- For the topping
- 78 ml (1/3 cup) brown sugar
- 15 ml (2 tbsp) plain flour
- 15 ml (1 tablespoon) butter
Instructions
- Pre heat oven to 190c
- Grease a muffin tin with butter
- Combine all of the muffin ingredients in a bowl and mix well - a food processor will also do a very good job
- Pour into the muffin tin until each well is 3/4 full
- Combine the sugar and flour for the topping in a separate bowl and cut in the butter until the mixture goes crumbly (like an apple crumble topping)
- Add the topping mixture to the top of each muffin
- Place in the over for 20 minutes or until golden brown
- Cool on a rack and then serve
