Ingredients

  • 1 banana (preferably over-ripe)
  • 2oz margarine
  • 1 egg
  • 5oz sugar
  • 1/2 tsp vanilla essence
  • 5oz self-raising flour
  • 1/4 tsp bicarbonate of soda
  • pinch of salt

Instructions

  • Blend the banana, margarine, egg, sugar and vanilla essence.
  • Add this mixture to the sifted flour, bicarbonate of soda and salt.
  • Pour the cake mixture into a small loaf tin and bake for 40 mins at 160 degrees.
