Ingredients

  • For Sponge-
  • 75g butter or margarine
  • 75g caster sugar
  • 1 egg, beaten
  • a few drops of vanilla essence
  • orange juice to mix
  • For Butter Cream-
  • 100g butter
  • 175g icing sugar
  • 2 tbsp milk
  • 2 tbsp orange juice
  • drop of vanilla essence
  • For topping-
  • 1 0range, sliced
  • jam, stirred

Instructions

  • Grease a tin with butter
  • Put the butter, sugar, egg, flour and vanilla essence all into a bowl
  • Mix with electric whisk
  • Add juice to mix
  • Put in greased tin. Cook in pre-heated oven for 30-40mins at 180C
  • While sponge is cooking, use the electric whisk to mix all of the dry ingredients for the butter cream
  • Add the milk and the juice to mix
  • After 30-40 minutes take out the sponge and leave to cool down for 5-10 minutes
  • Put an upside down bowl on the sponge a dig in to it by 1cm.
  • Cut off the outside rim produced by the bowl, add jam and put on the butter cream and put on the oranges
