Bacon, Eggs & Exotic Mushrooms

This recipe combines fluffy scrambled eggs with perfectly grilled bacon and sautéed mushrooms for a hearty and delicious meal. With a touch of cream and parsley, every bite is bursting with flavor. Serve this dish for a satisfying breakfast or brunch that will leave everyone wanting seconds.

Ingredients

  • 1 X 500g Livesey Bros Sumo Pack
  • 20g Butter
  • 1tbsp Chopped Parsley
  • 6/8 Free Range Eggs (6 if large, 8 if medium)
  • 2tbsp Double Cream
  • 8 Rashers of Bacon
  • Salt & Pepper (seasoning)

Instructions

  • Melt half of the butter in a frying pan over a high heat, when hot fry the mushrooms for 3 minutes until softened, then remove from the pan, and put into a bowl with the chopped parsley
  • - meanwhile grill the bacon for 5 minutes either side
  • Whisk the eggs in a bowl along with the seasoning and the cream
  • Melt the remaining butter in a pan over a medium heat, and add the egg mixture- stir continuously until they are scrambled
  • Serve the eggs on a plate, topped with the grilled bacon, then spread the mushrooms around the pile of eggs and bacon
