Ingredients

  • 3/4 lb. fresh asparagus cut into 1 inch pieces
  • 1 medium yellow pepper, julienned
  • 3 green onions
  • 3 tbsp. olive oil
  • 3 cups diced fresh tomatoes
  • 10 ounces cooked ham, cubed
  • Salt and pepper
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • Pinch of cayenne pepper
  • 1/3 cup grated Parmesan cheese
  • Splash of white wine

Instructions

  • Saute asparagus, onions and yellow pepper in oil, until onion is translucent and veggies are tender.
  • Add tomatoes, ham and wine.
  • Mix in seasoning. Sprinkle cheese and heat thoroughly.
