Ingredients

  • 60g dried apricots, chopped
  • 125g bacon pieces, chopped and fried
  • 1 large onion, chopped and fried
  • 2 sticks celery, thinly sliced
  • 100g brown breadcrumbs
  • 250g pork sausagemeat
  • 75g almonds
  • 2tblsp chopped parsley
  • 1 egg
  • 1tsp salt
  • ground pepper

Instructions

  • Mix all ingredients together in a bowl (by hand is best)
  • Stuff into the neck end of the turkey, pushing as far under the skin over the breast as you can
  • Cook turkey as normal
