Apple Pie Pockets

Ingredients
- 2 Tbs. unsalted butter, plus melted butter for
- brushing
- 2 apples, peeled, cored and diced
- 2 Tbs. sugar
- 1/4 tsp. ground cinnamon, plus more for
- sprinkling
- 4 slices white or cinnamon-raisin bread
Instructions
- Be sure an adult is nearby to help.<Br>
- In a braiser over medium-high heat, melt the 2 Tbs. butter. Add the apples, sugar and the 1/4 tsp. cinnamon and saut&#233; until the apples are tender, 5 to 7 minutes. Remove from the heat.
- Preheat a sandwich grill to medium-high according to the manufacturer's instructions.
- Brush the tops of the bread slices with melted butter and sprinkle with cinnamon. Turn 2 of the slices over and top each with half of the apple mixture. Top each with another bread slice, buttered side up.
- Place the sandwiches on the preheated grill and close the lid. Cook until the bread is crisp and golden brown, 3 to 4 minutes.
- Transfer the sandwiches to a cutting board and cut each in half diagonally. Serve immediately. Serves 2.
