Aperol Sour
This refreshing cocktail is a delightful mix of aperol, fresh lemon juice, and a touch of sweetness from simple syrup, all topped with a velvety layer of egg white foam. A perfect balance of flavors that will surely brighten up your day.

Ingredients
- Ice as needed
- 2 oz. aperol
- 3/4 oz. fresh lemon juice
- 1/2 oz. simple syrup (see related recipe at left)
- 1 oz. egg white
- Grapefruit twist for garnish
Instructions
- In a cocktail shaker filled halfway with ice, combine the aperol, lemon juice, simple syrup and egg white and shake until well chilled, 20 to 30 seconds. Strain into a martini glass, garnish with a grapefruit twist and serve immediately. Serves 1.
